Refurbishment of the central kitchen of the Balearic Islands Hotel and Catering School

What does it consist of?

The project to refurbish the central kitchen of the Balearic Islands Hotel and Catering School (EHIB) aims to modernise teaching facilities in the Archiduque Lluís Salvador building in Palma. This reform is essential to maintain the training level of the EHIB, which combines theoretical and practical classes in its restaurants open to the public, such as Miramar and Malvasía, with a daily capacity to serve around 250 people, including students, staff and external customers.

The project

The current kitchens, installed in 1994, have become obsolete after thirty years of operation. Existing equipment does not have original spare parts, which makes repairs more difficult and increases maintenance costs. Furthermore, gas and electricity energy consumptions are well above current efficiency standards, which negatively impacts the quality of service and training provided.


The plan includes three key actions: demolition of old structures, updating of the facilities and refurbishment of the kitchen and storage areas. The first phase foresees the removal of partition walls, false ceilings, obsolete furniture and outdated installations. 


In the second phase, significant improvements will be made to safety and energy efficiency: new fire extinguishing systems, renovation of the electrical and gas installation, and improvements to water evacuation and ventilation systems.


As far as the kitchen areas are concerned, two training rooms will be created: one for the first year, with 12 cooking stations, and one for the second year, with 8 stations. The bakery and pastry workshop will also be refurbished, optimising its layout for better ergonomics and efficiency during training.


Finally, all the cold rooms, both for conservation and freezing, as well as the equipment and accessories, will be renovated, which will ensure proper functioning of storage rooms and their adaptation to the teaching and operational needs of the EHIB.


With this reform, the Balearic Islands Hotel and Catering School will be able to maintain its commitment to training excellence and ensure that its students receive the best possible preparation for the labour market, improve energy efficiency and reduce operating costs.
